A super crunchy and fruit vegan apricot granola with almonds is the perfect way to start the day. Packed full of flavors and nutrients from pumpkin seeds, cacao nibs, cinnamon, coconut cream, etc. Gluten-Free too and ready in 30 minutes.

  • 2 cups gluten free oats
  • 1 cup almonds pounded
  • 1/2 cup pumpkin seeds
  • 1/2 dried apricots chopped
  • 1/3 cup cacao nibs
  • 1/2 teaspoon cinnamon
  • 3 tablespoons coconut cream
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 3 tablespoons quinoa flour
  1. Preheat oven to 350 degrees C.
  2. In a large bowl combine oats, almonds, pumpkin seeds, apricots, cacao nibs and cinnamon. Mix until thoroughly combined.
  3. In a small bowl combine coconut cream, maple syrup and vanilla extract.
  4. Add liquid mixture to the large bowl and mix until smooth.
  5. Sprinkle with quinoa flour and mix again.
  6. Bake on parchment lined baking sheet in single layer for 15-20 minutes, stirring halfway, until lightly toasted and browned.
