Add vegetable broth, salt/pepper to taste. Bring to a boil, reduce heat and simmer for 10 minutes.
Puree in blender or with immersion blender.
Serve with lemon juice, zest.
Optional garnish ideas: garlic chips, chickpea croutons, roasted squash, drizzle of olive oil.
