Ingredients
10ounceskalefirmly rolled up together and thinly sliced
10ouncesbrussel sproutsshredded
1tablespoontoasted hemp seeds
1cloveof garlicminced
2-3tablespoonstoasted sunflower seeds
2-3tablespoonstoasted pumpkin seeds
For the dressing:
4tablespoonsextra virgin olive oil
2tablespoonsvegan mayonnaise
2tablespoonslemon juice
2small shallots finely diced
1tablespoondijon mustard
Instructions
In a small bowl whisk together dressing until smooth.
In a large bowl toss together kale and brussels sprouts. Sprinkle with seeds and drizzle with dressing.
