Ingredients
  • 2 cups cooked brown rice cooked according to package directions
  • 1/3 cup toasted almonds (both slivered and sliced)
  • 1/4 cup vegan basil pesto
  • handful spinach chopped
  • 1 tablespoon lime juice
  • 1 tablespoon extra virgin olive oil
  • salt/pepper to taste
Instructions
  1. Mix all ingredients together in a large bowl until incorporated and serve.
