Gluten-free and Dairy-free Healthy Turkey Patties made with a handful of ingredients that come together in under 30 minutes. Filled with fresh flavors of lime, cilantro, tortilla and liquid egg whites. Serve with a crisp and refreshing corn salsa.

Ingredients
1poundground turkey
1-2teaspoonslime zest
1/4cupcilantrochopped
salt/pepper to taste
1teaspoonchipotle paprika
1/3cuptortilla crumbsgluten-free (plus additional for dredging patties)
1/4cupAll White liquid egg whites
For the salad:
2ears of corncut off the cob (1 cup corn kernals)
1tablespoonextra virgin olive oil
2tablespoonslime juice
1/2cupred oniondiced
1/2cupcilantrodiced
1/2cupred bell pepperdiced
Instructions
In a large bowl combine turkey, lime zest, cilantro, salt, pepper to taste, paprika, tortilla crumbs and liquid egg whites.
Mix gently until smooth.
Using your hands form 8 small rectangular patties.
Dredge patties in additional tortilla crumbs.
Heat pan over medium heat and add 1-2 tablespoons extra virgin olive oil. Cook patties on both sides until cooked through (few minutes per side).
To make the salad heat pan over medium heat, add 1 tablespoon extra virgin olive oil and corn. Cook for a couple minutes. Remove from heat.
To the pan add lime juice, red pepper, red onion and cilantro. Mix.
Serve patties with salad.
