Gluten-free and Dairy-free Healthy Turkey Patties made with a handful of ingredients that come together in under 30 minutes. Filled with fresh flavors of lime, cilantro, tortilla and liquid egg whites. Serve with a crisp and refreshing corn salsa.

  • 1 pound ground turkey
  • 1-2 teaspoons lime zest
  • 1/4 cup cilantro chopped
  • salt/pepper to taste
  • 1 teaspoon chipotle paprika
  • 1/3 cup tortilla crumbs gluten-free (plus additional for dredging patties)
  • 1/4 cup All White liquid egg whites
  • For the salad:
  • 2 ears of corn cut off the cob (1 cup corn kernals)
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons lime juice
  • 1/2 cup red onion diced
  • 1/2 cup cilantro diced
  • 1/2 cup red bell pepper diced
  1. In a large bowl combine turkey, lime zest, cilantro, salt, pepper to taste, paprika, tortilla crumbs and liquid egg whites.
  2. Mix gently until smooth.
  3. Using your hands form 8 small rectangular patties.
  4. Dredge patties in additional tortilla crumbs.
  5. Heat pan over medium heat and add 1-2 tablespoons extra virgin olive oil. Cook patties on both sides until cooked through (few minutes per side).
  6. To make the salad heat pan over medium heat, add 1 tablespoon extra virgin olive oil and corn. Cook for a couple minutes. Remove from heat.
  7. To the pan add lime juice, red pepper, red onion and cilantro. Mix.
  8. Serve patties with salad.
