A rich and creamy vegan sweet potato  soup with a secret ingredient. Black tea! And lots of paprika to give it the extra depth of flavor. Gluten-Free.

  • 2 1/2 - 3 cups vegetable broth
  • 3 cups cubed sweet potatoes about 3 medium sweet potatoes
  • 1 1/2 tablespoon olive oil
  • 1 green apple cubed (no need to peel)
  • 1 medium onion cubed
  • 1/4 cup very strong black tea
  • 1 teaspoon smoked sweet paprika
  • 1/4 teaspoon smoked hot paprika
  • 1/2-1 teaspoon salt
  • zest of 1 lime
  1. Preheat oven to 425 degrees F. In a bowl toss sweet potatoes and 1/2 tablespoon olive oil.
  2. In a single layer place sweet potatoes on baking sheet and bake until soft and just starting to brown (around 30 minutes).
  3. In a large pot heat remaining olive oil over medium heat and add onion. Cook for 1-2 minutes, add sweet potatoes and cook for 2 more minutes.
  4. Add the apple, cook for another minute, add the paprika and salt and continue to cook for 1 more minute, mixing everything together.
  5. Add the vegetable broth, bring to a boil and simmer for 10 minutes.
  6. Add black tea and continue to cook for another 10 minutes or until apples have broken down and are soft.
  7. Use an immersion or regular blender to puree the soup. Serve garnished with lime zest and splash of juice (optional).
