A super healthy and delicious creamy and smooth vegan red lentil curry recipe with a hint of Thai spices and flavors. Gluten-Free too. Perfect fora meatless meal.

Ingredients
  • 4 cups pumpkin peeled, seeds removed and cut into 1 inch cubes
  • 1/2 cup coconut milk
  • 1 1/2 cups red lentils picked over, rinsed and drained
  • 2 cups vegetable broth
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup diced onion 1 small onion
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 2 tablespoons red curry paste
  • 2 teaspoons gluten-free fish sauce use gluten free tamari for vegan version
  • fresh cilantro and lime wedges to garnish
Instructions
  1. Boil cubed pumpkin in water in a pot for 15-20 minutes until pumpkin is soft when pierced with a fork. Add salt to taste. Drain. Puree pumpkin with coconut milk in a blender of food processor until smooth.
  2. In a separate pot combine lentils and vegetable broth. Bring to a boil, reduce heat and simmer for 20 minutes, or until lentils are soft and cooked through.
  3. In a separate pan heat 1 tablespoon olive oil and cook diced onion until translucent. Add ginger, garlic and red curry paste. Continue to cook for 1-2 more minutes or until fragrant.
  4. Add pumpkin puree to the pan and mix. Add fish sauce, mix and continue to cook for 1-2 more minutes (adding more coconut milk if needed to thin out the sauce). Add lentils and mix.
  5. Serve garnished with fresh cilantro and a squeeze of lime juice.
