A light vegan and gluten free kale and alfalfa salad with quinoa and avocado. A one pot meal ready in under 30 minutes for a meatless meal.

Ingredients
  • 3 cups cooked quinoa about 1- 1 and 1/2 cups uncooked quinoa
  • 1/4 cup crunchy sprouts
  • 3 ounces alfalfa sprouts
  • 1 avocado cubed
  • 2 english cucumber cut into matchsticks
  • 1 cup packed kale stems removed and finely sliced
  • 1 tablespoon whole grain dijon mustard
  • 1-2 tablespoons extra virgin olive oil
  • 1 lemon zested and juiced
Instructions
  1. In a small bowl combine lemon zest, juice, mustard and olive oil.
  2. In a large bowl combine remaining ingredients and top with dressing. Serve warm or cold.
