Tuna Stuffed Avocado Boats make for a simple appetizer or light dinner meal yet are full of fresh crisp flavors from the veggies and Asian themed dressing. Gluten-Free and Dairy-Free too.

Ingredients
  • 1 can tuna drained and flaked
  • 1 clove garlic minced
  • 1 inch piece of ginger grated
  • 1 - 1 1/2 tablespoons gluten free tamari (use Coconut Aminos + Fish Sauce for Paleo/Whole30)
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 2 tablespoons chopped green onions
  • 1 avocado cubed
  • 1 small cucumber cubed
  • 1/2 lime juiced and zested
  • handful cilantro chopped
Instructions
  1. In a small bowl combine garlic, ginger, tamari, sesame oil, olive oil, and lime juice. Mix the dressing until smooth.
  2. In a large bowl combine tuna, avocado, cucumber, cilantro, lime zest, and green onions.
  3. Pour dressing over the tuna avocado mix.
  4. Serve in the avocado shells.
Recipe Notes

If you are following a Paleo or Whole30 diet instead of tamari use a mix of Coconut Aminos and Red Boat Fish Sauce
