Quick and easy to make tomato chicken soup with cherry tomatoes and white beans will warm your soul and make you feel better on even the worst of days. Gluten free and dairy free too.

Ingredients
  • 4 cups home made chicken broth
  • 2 cups shredded chicken
  • 20 cherry tomatoes halved
  • 1 tablespoon olive oil
  • 1 small onion halved and thinly sliced
  • 5 cloves garlic thinly sliced
  • handful basil slivered
  • 1 tablespoon vegan basil pesto
  • 1/2 - 1 can cannellini beans
Instructions
  1. Heat oil over medium heat in a pot. Add onion and cook for a few minutes until translucent. Add garlic and cook until aromatic.
  2. Add tomatoes and cook for a few minutes more. Add salt/pepper to taste.
  3. Add chicken broth and bring to a boil. Add pesto and white beans. Reduce heat and simmer for a few minutes.
  4. Add shredded chicken and cook until chicken is heated through.
  5. Serve garnished with fresh basil.
