A simple sandwich full of flavors and heated up to make all the flavors blend together and the cheese ooze out. A delicious lunch or quick dinner. Turkey Panini for the win!

Ingredients
  • turkey cold cuts
  • 4 slices bread lightly toasted (use gluten free bread for gluten free version)
  • 2 tablespoons mayonnaise
  • 2 tablespoons basil pesto
  • 1 to mato thinly sliced
  • thinly sliced gruyere cheese
Instructions
  1. Spread pesto on 2 slices of bread and mayonnaise on the other two.
  2. On the mayonnaise side layer turkey, tomato and cheese, top with the pesto piece of bread.
  3. Heat oil or butter in a pan over medium heat and add the two sandwiches. With a spatula push down on the sandwiches and cook until lightly browned then flip over (add more butter or oil if necessary) and cook on the other side until lightly browned.
  4. Serve hot.
