Ingredients
1/4-1/2cupsliced almonds
1poundbrussels sproutsshredded (on box grater or in food processor)
1/2-1green applepeeled and cubed
a few tablespoons shredded pecorinooptional, omit for vegan or dairy free version
2tablespoonsolive oildivided
1tablespoondijon mustard
1limejuice
Instructions
Heat pan over medium heat add almonds. Toast until lightly browned and remove.
Heat 1 tablespoon oil in pan and add brussels sprouts. Cook for a few minutes.
In a small bowl combine remaining olive oil, mustard and lime juice.
In a bowl combine brussels sprouts, almonds, apples, cheese (optional) and dressing.
Toss and serve.
