Ingredients
For the sauce:
4tablespoonsfresh lime juice
4tablespoonsfish saucesubstitute soy sauce for vegetarian or vegan version
1.5tablespoonspalm sugar or brown sugar
For the salad:
4clovesof garlic
2tablespoonsdried shrimpomit for vegetarian or vegan version
3-4red bird's eye chilies
3 tomatoescut into wedges
4long beans or asparaguscut into 2 inch segments
10ouncesunripe papayapeeled and shredded
1carrotpeeled and shredded
5tablespoonsunsalted peanuts
Instructions
To make the sauce combine fish sauce, lime juice and sugar in a bowl. Mix until sugar has dissolved. Taste and adjust if needed.
To a wooden mortar add shrimp, garlic and chilis and start to lightly pound.
Add tomatoes and continue to lightly pound.
Add long beans and pound a few times.
Add sauce, papaya, carrot and peanuts. Carefully pound with the spoon in the other hands so as not to make the papaya mushy.
Taste and adjust flavors with additional fish sauce, lime juice or sugar if necessary
