Simple tomato dish to bring out their juicy flavors -  breaded tomatoes coated in panko and regular breadcrumbs

Ingredients
  • 1 large tomato
  • 1/4 cup breadcrumbs with Italian seasoning
  • 1/4 cup panko breadcrumbs
  • 1/4 cup gruyere shredded
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon balsamic vinegar
  • 1 teaspoon olive oil
Instructions
  1. Preheat oven to 350 degrees F. Combine breadcrumbs, panko, gruyere and garlic in bowl.
  2. In a separate bowl combine soy sauce, balsamic and 1 teaspoon olive oil.
  3. Slice tomatoes 1/4-1/2 inch thick.
  4. Brush soy sauce mix over tomatoes, season with salt and pepper and dip into the bread crumb mix on both sides.
  5. Grease baking sheet with cooking spray or oil and place tomatoes in single layer. Sprinkle 1 tablespoon olive oil over the tomatoes.
  6. Bake 15-20 minutes then broil for a few minutes, until lightly browned.
