Quite possible one of my new favorite breakfast dishes - a soft boiled egg sandwich with avocado. Open faced because who needs the extra calories?!

Ingredients
  • 2 piece of bread toasted (*use gluten free bread for gluten free version)
  • 2 soft boiled eggs peeled and sliced
  • 1/2 avocado
  • 1/2 lime
  • 1/2 cup shredded Rotisserie chicken or cold cuts
  • handful pea shoots or alfalfa sprouts
Instructions
  1. Spread avocado on toast.
  2. Top with chicken or cold cuts, eggs, and pea shoots. Sprinkle with fresh lime juice.
  3. Serve immediately!
