Bacon Wrapped Scallops with Spicy Mayo are creamy, crunchy and delicious. Serve as an appetizer or a full meal. Gluten-Free and Dairy-Free too.

  • 1 pound large scallops
  • 1 pound bacon
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha
  • 1/2 lime  juiced
  • 2 tablespoons cilantro chopped
  • 1 head lettuce
  • 1-2 avocados sliced
  • toothpicks
  1. Turn on broiler. Spray baking sheet with cooking spray.
  2. Lightly fry bacon 5 minutes per side.
  3. Wrap each scallop in a piece of bacon and secure it with a toothpick.
  4. Place scallops on baking sheet on their sides.
  5. Cook for 10-12 minutes, turning once.
  6. Mix together mayonnaise, sriracha, lime and cilantro.
  7. Peel lettuce leaves carefully to form cups.
  8. Place scallops and avocado slices on lettuce "cups" and drizzle with spicy mayo mix.
  9. Sprinkle some more Sriracha to add spice and use cilantro leaves as a garnish.
