Ingredients
  • 1 15 oz can chickpeas drained and rinsed
  • 2 small Perisan cucumbers chopped
  • 1 to mato chopped
  • 1/4 small red onion chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1 tablespoon shredded Parmesan cheese omit for vegan version
  • 1 tablespoon olive oil
  • 2-3 tablespoons balsamic vinegar
  • salt pepper, to taste
Instructions
  1. Combine ingredients in a large bowl. Toss to combine. Refrigerate for 45 minutes.
