Chicken Broccoli Stir Fry with Shiitake mushrooms comes together in 30 minutes and makes for an easy low fuss weeknight healthy dinner. Gluten Free and Dairy Free too!

Ingredients
  • 3 tablespoons Armour Premiun All-Natural Lard divided
  • 1 tablespoon garlic minced
  • 2 tablespoons ginger minced
  • 8 ounces shiitake mushrooms caps, removed and thinly sliced
  • 1.6 pounds chicken breast cubed, (or skin less bonesless chicken thighs)
  • 16 ounces broccoli florets cut up
  • 1/4 cup tamari
  • 1/4 cup honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vineger
  • 1 tablespoon chili garlic sauce
  • 1.5 cups rice cooked according to package directions
Instructions
  1. Heat 2 tablespoons Armour Premiun All-Natural Lard in a large wok over medium high heat. Add garlic and ginger. Stir fry for 1-2 minutes until fragrant. 

  2. Add shiitake mushrooms and cook until mushrooms are lightly browned on each side. 

  3. Remove mushrooms and ginger garlic mixture from the wok. 

  4. Add remaining 1 tablespoons Armour Premiun All-Natural Lard to the wok. 

  5. Add chicken. Cook until browned and cooked through. 

  6. Add broccoli florets and stir for a few minutes. Add shiitake and ginger garlic mixture back to the wok. 

  7. In a small bowl combine the sauce ingredients, honey, tamari, chili garlic sauce, sesame oil and rice vinegar. Mix until smooth. Add sauce to the wok and mix. Cook for 1-2 minutes until sauce has coated everything in the wok. 

  8. Serve over rice.
