Only 10 ingredients and 25 minutes minutes are needed for this delicious BLT pasta salad with a super creamy and spicy avocado dressing to bring it all together!

For the Avocado Dressing:
  • 1 whole avocado
  • 1/4 cup mayonnaise
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 1 whole jalapeno seeds removed
  • 1 whole lime juices
  • salt/pepper to taste
  1. Cook pasta according to package directions

  2. Heat skillet or pan over medium heat and add bacon in a single layer. Cook until browned, flip over and continue to cook until crispy. Drain on paper towels. Cut bacon into large pieces (2-3 inches long)

  3. In a blender or food processor combine dressing ingredients and blend until smooth. Add salt and pepper to taste. 

  4. In a large bowl combine, pasta, arugula, cherry tomatoes, bacon and dressing.
