This cauliflower rice skillet with chicken sausage, peppers, tomatoes and chicken bone broth makes for the perfect 30 minute weeknight dinner the whole family will love. High protein, low carb and simply packed full of flavor!

Ingredients
  • 1 tbsp extra virgin olive oil
  • 1 poound chicken sausage, casing removed (can use chicken thighs instead)
  • 3/4 cup onion diced
  • 3/4 cup red pepper diced
  • 1 tbsp garlic minced
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 cup tomatoes diced
  • 3 cups cauliflower riced (grated)
  • 1 cup Kitchen Basics Chicken Bone Broth
  • optional: lemon juice and parsley as a garnish
Instructions
  1. Heat olive oil over medium high in a deep pan or skillet. Add chicken sausage and cook until browned, breaking it up into smaller pieces, about 7 minutes. 

  2. Add onions and cook for a few minutes. 

  3. Add red peppers and cook for a few minutes. 

  4. Add garlic, salt, cumin and paprika and cook for 1-2 minutes. 

  5. Add tomatoes and cook for a few minutes. 

  6. Add cauliflower rice, mix and cook for 1-2 minutes. 

  7. Add chicken bone broth, bring to a boil, reduce heat and simmer for 5-10 minutes. 

  8. Optional: serve garnished with lemon juice and parsley
