This cauliflower rice skillet with chicken sausage, peppers, tomatoes and chicken bone broth makes for the perfect 30 minute weeknight dinner the whole family will love. High protein, low carb and simply packed full of flavor!
Heat olive oil over medium high in a deep pan or skillet. Add chicken sausage and cook until browned, breaking it up into smaller pieces, about 7 minutes.
Add onions and cook for a few minutes.
Add red peppers and cook for a few minutes.
Add garlic, salt, cumin and paprika and cook for 1-2 minutes.
Add tomatoes and cook for a few minutes.
Add cauliflower rice, mix and cook for 1-2 minutes.
Add chicken bone broth, bring to a boil, reduce heat and simmer for 5-10 minutes.
Optional: serve garnished with lemon juice and parsley
