  • 2 slices bread
  • 1 tbsp mayonnaise
  • 1 tbsp pesto
  • 1 handful arugula
  • 1 handful alfalfa sprouts
  • 1/2 avocado
  • 2 oz smoked salmon
  • 1 cucumber
  1. Lightly toast both slices of bread.

  2. Add pesto to one slice and mayonnaise to the other.

  3. Top pesto slice with arugula, alfalfa, smoked salmon, cucumber and avocado. Add other slice of bread on top.

  4. Cut in half and serve.
