Zucchini Rolls with Hummus, Chicken, Mint and Avocado {GF, DF}

Super light and refreshing 20 minute 6 ingredient low carb zucchini rolls with hummus, chicken, cucumber, mint and avocado make for the perfect party appetizer or light meal. Gluten Free + Dairy Free too.

Tell me you love food rolled up into other food as much as I do. Best food concept ever? I think so. It’s just so fun. You super thinly slice a veggies, pack it full of other ingredients and roll it all up again.

Now this works fabulously with cucumbers (as you should already know from my Asian shrimp and avocado cucumber rolls with wasabi aioli, as well as my vegan tofu and marinated Asian veggies cucumber rolls) but cucumbers can be kind of tricky.

They’re in nature less flexible than zucchini and if you don’t cut them super thin, you really lose that flexibility and can end up a messy pile of cracked cucumber strips.

Long story short – cucumbers are way less forgiving and require more patience, than the more flexible and amateur friendly zucchini.

The trick with zucchini is after mandolin slicing it, placing each zucchini ribbon side by side on a paper towel and lightly salting each slice.

You need this to get some of that extra moisture out of the zucchini – again to make it more pliable and less soggy all at the same time.

After just 10-15 minutes you will see the zucchini starting to sweat out all the extra moisture which you can then pat dry with a paper towel.

For the filling the options are endless. I opted for mint,  avocado, chicken cold cuts, cucumber, and hummus.

You know how when you shop around at different grocery stores you have your favorite products at each one/

Like Trader Joe’s has a killer edamame hummus, which I can’t really find anywhere else. Whereas, Whole Foods makes their own in house turkey and chicken cold cuts and that’s the kind of cold cuts you need to be eating.

Those slimy plasticky looking nitrate infused perfect looking oval shaped regular cold cuts kind of freak me out. Not saying there aren’t good brands out there but my go to is the Whole Food’s in house ones. Or just grab some chicken meat off of a rotisserie chicken. That works too.

Just promise me you won’t spoil these aweaome zucchini rolls with sub par cold cuts.

The mint is an absolute must too, so don’t skip out on that. Mint + zucchini (as I discovered in my vegan zucchini rolls with herbed cashew ricotta, avocado and mint) were made to always be together.

One just brings out the best in the other.

Your eyes literally light up with glee when zucchini and mint are blended together in your mouth.

Trust me on this one!

This makes for a perfect party appetizer (and I recently served it as such, during a family reunion at my house with my cousins and aunts) or a light and refreshing lunch.

Low carb, filled with protein and veggies, this is a feel good meal that you’ll absolutely love.

Ingredients
  • 1-2 zucchini thinly sliced on a mandolin
  • 1/4 - 1/2 cup edamame hummus or other hummus
  • handful mint
  • 1 avocado thinly sliced
  • 4 ounces chicken or turkey cold cuts cut into small pieces
  • 1-2 small English cucumbers peeled and cut into matchsticks
Instructions
  1. Place thinly sliced zucchini side by side on paper towels. Lightly salt to allow zucchini to sweat. Let sit for 15 minutes and pat dry with paper towels.
  2. Top each zucchini slice with spoonful of hummus, a few cucumber matchsticks, mint leaf, piece of chicken or turkey, and piece of avocado.
  3. Roll tightly up.
  4. Repeat with remaining ingredients.

    These are beyond adorable!! I’ve never used zucchini for rolls like this. It’s such a great idea! And I’m so with you on the cold cuts thing. I know the packages say they are meat, but most of them do not look like any meat I’ve ever seen before. 😉
