  • 1 pound ground chicken
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garclic
  • 2 small english cucumbers peeled and cubed
  • 1/2 cup green onions
  • 1-2 tablespoons gluten free tamari
  • 2 teaspoons chili garlic sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped mint
  • 1 head iceberg lettuce separated into lettuce cups
  • 1 tablespoon roasted sesame seeds optional
  • 1 tablespoon Sriracha optional
  1. Heat pan over medium heat and add oil. Add ground chicken and cook until cooked through (10 minutes or so), stirring frequently to break up the meat.
  2. To the chicken add minced ginger and garlic. Cook until fragrant, 1-2 minutes.
  3. Add cubed cucumbers, green onions, tamari, chili garlic sauce, sesame oil, rice vinegar and honey.
  4. Cook for a few minutes.
  5. Add cilantro and mint. Mix.
  6. Serve in iceberg lettuce cups, topped with sesame seeds and Sriracha.
