30 minute one pan chicken and veggies is the perfect low fuss easy weeknight dinner meal. Made with chicken thighs mixed with asparagus, red pepper, red onion, and broccoli. GF, DF & Paleo.

Ingredients
  • 1.5 pounds skinless boneless chicken thighs
  • 1 head broccoli cut into florets
  • 1 red onion cut into thick slices
  • 1 bunch asparagus cut into 2-3 inch segments
  • 1-2 red peppers cut into large pieces
  • 4 cloves garlic minced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon oregano
  • 1 tablespoon smoked paprika
  • salt & black pepper to taste
Instructions
  1. Preheat oven to 400 degrees F.
  2. Combine all ingredients in a large bowl and mix.
  3. Place on baking sheet in single layer and bake for 20-25 minutes.
  4. Broil on high for 5 minutes.
