Outside the balcony in the apartment we are renting in Penang, Malaysia there is a ramp that goes down to the garage.
The ramp is at a slight incline and probably takes less than a minute to walk down. Every single morning, I look out over the balcony and see a middle aged overweight man walking back and forth up and down the ramp.

This has got to be his idea of a daily work out right? It’s pretty strange to me though, considering there is an awesome gym right in the condo complex. But I’ve never seen him at the gym, only walking up and down the ramp. Not even jogging, or wogging (which is a combo of a walk and a job), just slooooowly walking up and down.
You think this is odd too right? I can’t imagine a walk up and down a ramp could be that good of exercise or burn off too many calories.ย

This is my favorite low fuss 30 minute meal that is super light and low carb. No heavy rice, pasta or bread needed when you can embrace all the delicious flavors of these Asian chicken lettuce wraps. I love making these and have made these for my family dozens of times over the years. You could also choose to serve these in romaine lettuce leaves but I prefer these bigger and wider butter lettuce leaves.
These gluten free Asian chicken lettuce wraps are perfect for a light dinner or as an appetizer.
- 1 pound ground chicken
- 1 tablespoon oil
- 1 tablespoon gluten free tamari
- 2 teaspoons fish sauce
- 1 1/2 teaspoons sesame oil
- 4 cloves garlic minced
- 2 small cucumbers cubed
- 1/2 red onion diced
- handful mint chopped
- handful cilantro chopped
- handful green onion chopped
- 2 heads butterhead lettuce leaves torn off

Heat oil in a pan and add ground chicken, using a spatula to break up the pieces. Cook for a few minutes and add garlic and red onions.

Continue to cook until chicken is cooked through. Add soy sauce, fish sauce and sesame oil. Give it a quick stir and remove from heat.

To the chicken add mint, cilantro and green onions.

Serve on lettuce leaves.

But in regards to that man – we know nothing of his life. Judging him and posting it on the internet is not helping him, or anyone else for that matter. He may be very ill and all he can do is walk up and down that ramp. If you really want to help him, why don’t you bring him some of your food?
