The classic BLT sandwich is turned into a BLT salad and jazzed up with a creamy vegan avocado dressing. While the salad is pretty standard this dressing is simply out of this world.
So you might have noticed that I haven’t post in a while — over a week I know! I’ve been busy though. Busy redeveloping the site, selecting a new theme and customizing it. While I have not had to do any of the technical work myself (that’s what developers are for) I have been dealing with the headache of having to figure out how I want the site to look, and the frustration of getting that to happen.
For all the visual/artsy people out there, I envy you. All I know is I want my site to look awesome, yet have absolutely no idea how to get it there. I know what I don’t like when I see it, but somehow my mind cannot put together the big picture to actually describe and communicate what features I want and how I want them to look. It’s a tricky business.
I won’t bore you with it, I’ve had enough of it all week. So, while I still sort out a few kinks I won’t formally introduce the new site just yet, but instead today I’m sharing a BLT salad with a creamy vegan avocado dressing.
What have I been doing all these years, and why haven’t I created this heavenly dressing sooner? Now I’m not even exaggerating, this avocado dressing will change your life. It is nothing short of incredibly awesomely delicious. And it’s gluten free and vegan. The possibilities here are endless.
I was practically eating it by the spoonful out of the blender. It’s that good. And the blender does most of the work. Win win.
Now I love a good BLT salad but with this creamy tangy vegan avocado dressing on top, it’s taken to a whole new level.
We’re talking about avocados, olive oil, coconut milk, water, mustard, lemon juice and garlic. That’s all you need for a bite of paradise. Just blend that right up and you’ll want to top all your meals with this. I can see this going in so many different directions. As a dip, as a pasta sauce, you name it. You’re going to be seeing a lot more of this.
I’m telling you this home made vegan avocado dressing is one of the best things I’ve made recently. Simply cannot stop licking it off the spoon. So good.
I was so excited about the BLT salad with the vegan avocado dressing that I wanted to take one of those baller food blogger photos where the pic is snapped as the dressing is being lightly drizzled over top.
Without a tripod handy I had to enlist D’s help.
Big mistake. Those dramatic food shots I was envisioning turned into a gloopy mess as he poured the whole thing out drastically. What happened to a light flick of the wrist?
Not the look I was going for.
Good thing I had a second bowl handy that I took into my own hands.
So until I find a more professional photography assistant I won’t be capturing the dressing pouring shots. But that aside, the vegan avocado dressing is simply amazing and would pair perfectly with just about any salad.
The BLT salad with creamy vegan avocado dressing is a good one to start with though.

- 10 slices bacon
- 2 to matoes chopped
- 4 small heads butterhead lettuce chopped
- salt/pepper to taste
- 1/2 avocado
- salt/pepper to taste
- 1 clove garlic minced
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/4 cup coconut milk
- 1/4 cup water or more if you want the dressing a bit thinner
- 1 tablespoon whole grain dijon mustard

In a pan cook bacon until crispy. Drain on paper towels and chop into bite sized pieces.

Assemble 4 salad bowls with lettuce, tomatoes and bacon.

To make the dressing add all of the ingredients to a blender and blend until smooth.

Top salads with dressing.

Mmmm that sounds delightful! What do you think about subbing coconut milk for almond milk? I never have coconut milk handy :-\

hmm hard to say if almond milk would work – it might not be creamy/thick enough but I suggest you try it and see how it turns out? The taste will be a bit different I imagine but still should be delicious, just a bit thinner perhaps?

Vegan dressing on a Bacon tomato salad? Is this just to point out that the Vegan dressing could be also used on a vegan salad?

I mention that the dressing is vegan because yes it can be used on a serious of various vegan meals, even though in this recipe I used it on a BLT salad made with bacon, but it could just as easily be used on a BLT salad made with vegan coconut bacon for the same flavor profile.

I had never heard of rice paper bacon until you just mentioned it but I’ve looked it up and I absolutely HAVE to try making it too!
