Snack time is the best time. Are you with me?
Where would we be without our snacks? I know I would be lost, sad and hungry. And I’m not just talking about myself here – I know my husband feels the same exact way, and if we had kids they would agree with us, too.
For families with children, coming up with snack ideas can be a serious challenge. The grocery stores nowadays are filled to the brim with so many different options that it can be simply overwhelming making a simple choice in there.
And that’s where the O Organics® line, available in New England exclusively at Shaw’s and Star Market, comes in. Having worked at Shaw’s back in high school, I am very familiar with the store and happy to see that in recent years, the O Organics brand has been brought in. This line of over 1,300 organic products allows you to make healthy and affordable snacks for the whole family at a price point below the national level for other organic brands. All of the products are organic – which is very important to me, as I always strive to seek out the best quality ingredients at the store.
All of the organic products are grown without synthetic pesticides, genetic modification, growth hormones or antibiotics.
I was lucky enough to be invited to an O Organics snack event held in Boston, where the registered dietician, Annessa Chumbley, was giving a few different snack-making demonstrations.
She showed us how easy is it to turn the 2-pack Cage-Free and Organic Boiled Eggs into avocado deviled eggs – a favorite for all avocado lovers, myself included.
For those who love snacks in liquid form, there were plenty of smoothie options to work with.
I needed a cup of coffee first, though, and a few chips, salsa and hummus bites.
After learning more about the brand itself and the various products offered, including hard-boiled eggs, chicken sausage, dairy-free milk, kombucha, chips, salsa, crackers, flatbread, etc., it was time for us to make our own bento snack boxes.
There were plenty of ingredients to choose from, but, naturally, I went for an all-savory bento snack box. Dairy free, too, of course!
For my snack box I selected hummus – conveniently sold in individual pouches – baby carrots, cucumbers, pea crisps, pita chips, cherry tomatoes and hard-boiled eggs.
All to be served with my new favorite kombucha, of course. Guava is the best flavor.
Now while some might find hard-boiled eggs plain and boring, they are one of my favorite snacks. They’re healthy, high in protein, filling and just good for you.
To liven them up a little bit, I decided to make my own savory afternoon snack – hummus egg salad bites with cherry tomatoes over chicken sausage and flatbread crackers.
The ingredients needed for this snack are:

- O Organics Tomatoes Grape Organic
- O Organics 2pk Cage Free Boiled Egg
- O Organics Hummus Singles
- O Organics Organic Rosemary Flatbread Crackers with Sea Salt
Although the chicken sausage is fully cooked I wanted to get a bit of a sear on it so I pan fried the chicken sausage slices in olive oil for a few minutes.
In the meantime I chopped the eggs and tomatoes and combined them in a bowl with the hummus, salt, pepper, and dash of both cumin powder and curry powder.
Instead of the regular mayo we’re swapping that out with healthier hummus as the dressing in these hummus egg salad bites. If you’ve never tried hummus and eggs together, you’re in for a treat – they are great together.
Once the hummus egg salad is mixed together it’s time to assemble these bites. Top the flatbread crackers with chicken sausage, the egg salad mixture and garnish with fresh cilantro.
This makes for a perfect high protein savory afternoon snack that can also easily be adjusted to your taste. If you don’t like chicken, omit the sausage. If you’re not into crackers or are gluten-free, keep this low carb by serving this hummus egg salad just on the chicken sausage slices.
Hummus Egg Salad Bites with tomatoes and chicken sausage make for the perfect high protein afternoon snack or party appetizer. Dairy Free and can be made gluten free too!
- 2 whole O Organics 2pk Cage Free Boiled Egg chopped
- 1/3 cup O Organics Hummus
- 1/3 cup O Organics Tomatoes, Grape, Organic quartered
- salt/pepper to taste
- 4 links O Organics Sausage Italian Hot Full Cooked thinly sliced on a diagonal
- 1 tablespoon olive oil
- cumin/curry powder to taste
- 6 whole O Organics Flatbread crackers
- handful cilantro to garnish

Heat olive oil in a pan over medium-high heat and add the chicken sausage slices. Pan fry on each side for a few minutes until browned. Remove from heat.

In a bowl combine chopped eggs, chopped tomatoes, hummus, salt, pepper, curry and cumin powder. Mix.

To serve, top crackers with chicken sausage sliced, and hummus egg salad mix.Garnish with fresh cilantro.

I’d say there are days that I only live on appetizers and I love it! 🙂 These hummus egg salad bites look delicious. Where I live it’s still hard to get a good selection of organic produce which is a shame. O Organics sounds like a great brand!
