A low fuss, one pot, home made meal that comes together in 15 minutes or less – vegan couscous with sun-dried tomatoes, avocados and artichokes.

With Christmas coming up in just two days I am sure everyone is currently scrambling to finish up all that Christmas shopping and get all those presents wrapped.

The other day I heard a commercial on the radio that Kohl’s was going to stay open 24 hours a day for a week before Christmas. Twenty four hours a day. Insane right? Who is so frantic with their holiday shopping that they need to get to Kohl’s in the middle of the night? Can someone else that to me?

I feel seriously sorry for all the retail workers who need to work during the holiday rush. Then after the shopping is done there is all the wrapping to get started on. What are your thought on wrapping gifts? Love it or hate it?

I honestly kind of love it. It’s seems fun to me. I’m sure plenty of you disagree.

With all the shopping and wrapping consuming everyone’s time and mental sanity, is there any time for cooking left? I’m guessing not much.

That’s where this simple 15 minute vegan couscous recipe comes in. I kid you not, this recipe comes together in 15 minutes. I specifically timed myself while making this and I cleared a solid 13 minutes, but I’ll give you an extra two minutes in case you’re not as quick in the kitchen.

That is seriously all it takes to get this one pot healthy and delicious dinner meal on the table. Couscous is incredible because it cooks in minutes. You just add in some broth or boiling water, remove from heat, let the couscous absorb the liquid for a solid few minutes, fluff with a fork and that’s it.

In the mean time you can getting to chopping all the ingredients. I love to add sun-dried tomatoes, avocados, capers, artichoke hearts, basil, spinach, and a squeeze of lemon juice and drizzle of the sun-dried tomato oil to this dish.

The possibilities are endless though. You could add nuts, seeds, roasted red peppers, olives, various herbs, fresh veggies, you name it.

A little cooking secret of mine. I love to add the oil from the sun dried tomatoes to various recipes. It has absorbed that tomato flavor and is infused with all that goodness so adds in an extra bit of something to every recipe. I use it to cook with or just to drizzle on salad or various dishes. Much more flavorful than your standard olive oil.

Over the years I have made this vegan couscous recipe countless times. It is perfectly for a quick weeknight dinner, or to bring to a picnic, when you’re camping and are short on ingredients and utensils.

For the gluten-free eaters out there use quinoa instead of couscous. The cooking time will differ, as quinoa takes a solid 20 minutes to make but the dish will still be delicious.

So for all you last minute holiday shoppers out there who don’t have time to put together a lengthy home made dinner, make this 15 minute vegan couscous instead.

Ingredients
  • 1 cup couscous cooked according to package directions
  • 1 cup chopped sun-dried tomatoes
  • 1 cup chopped artichoke hearts
  • 1 avocado cubed
  • 1-2 tablespoons capers
  • 2 handfuls fresh spinach or arugula
  • 1 tablespoon oil from sun-dried tomato jar
  • 1 tablespoon lemon juice
  • salt/pepper to taste
Instructions
  1. Cook couscous according to package directions using vegetable broth or water. Fluff couscous with a fork when cooked.
  2. In a large bowl combine all ingredients. Mix.
