A healthy vegan and gluten free one pot lime quinoa and artichoke meal that comes together in under 30 minutes and is bursting with fresh flavors

I’ve been in Europe for the last three weeks and it seems like my blog may have gotten a bit neglected in the process.

I just can’t help it.

Europe is simply too charming to spend hours behind a computer screen. With the spring weather coming around, I’ve got to explore, walk down those narrow streets, lined with colored window panes and balconies filled with flower pots.

The smell of a freshly made cappuccino and the clink of a wine glass has me begging for an afternoon outdoors sitting on the terrace of a quaint cafe and simply people watching.

In times like these you don’t even want to be in the kitchen.

And that’s when you need a quick non demanding meal to allow you to get back to the city strolling. So welcome lime quinoa into my life.

This vegan lime quinoa with artichokes and avocado comes together in under 30 minutes. You basically have the quinoa cooking as you prep all the other ingredients. No other cooking required. Just one pot for the quinoa and a cutting board is all that you need.

This one pot lime quinoa meal has plenty of fresh vibrant flavors from the herbs and everything in life is better with a bit of artichoke and avocado. Don’t you agree?

Oh and a few squeeze of lime too is a must.  Don’t you just love meals that come together in under 30 minutes and in one pot ? Minimal mess and low fuss. No clean up required. Just rinse off the cutting board and you can even store the leftovers of this lime quinoa in the pot you made the quinoa in. Now that’s what I call easy cooking! Now that’s what I call easy week night cooking that allows you to still enjoy the rest of your eating while having a nutritious and healthy home cooked meal from scratch.

Ingredients
  • 1 cup quinoa
  • 1 avocado
  • 1 cup artichoke hearts sliced
  • 2 limes zested and juiced
  • 3-4 tablespoons olive oil
  • 1/2 cup chopped cilantro
  • 3-4 cloves garlic minced
  • 1 small red onion diced
Instructions
  1. Cook quinoa according to package directions.
  2. In a small bowl combine lime juice, zest, olive oil and garlic.
  3. In a large bowl combine all of the ingredients and toss until mixed.

    Ah this looks great! Looks like you used the red quinoa, which I have not tried before because I rarely see it in store. I just need to buy some off Amazon so I can try it. Great recipe, Vicky! Pinned to my Crazy for Quinoa board! 🙂

      Thanks! I actually prefer the standard light colored quinoa the best. I couldn’t find anything so had to buy the mixed quinoa but I find it a bit harsher then the light quinoa. Worth trying to see if you might like the mixed or red quinoa though!

    Wow, yum! I am going to make this tonight since I was looking for a recipe to use up leftover artichoke hearts and I always have quinoa in the pantry. I’m currently soaking 2 cups (we’re big eaters) and had to mix and match with white, red, and black since I was almost out of white but I’m sure it will be delicious no matter what quinoa is used. I might add some black beans to make it a bit heartier too. Thank you!

      I hope you enjoy the recipe! Using the different types of quinoa won’t make too much of a difference so feel free to use whatever type you have on hand or a mix of all of them! Adding black beans sounds like a great addition too : ))
