This cold cut roll ups is a recipe my grandmother and I came up with.
Every summer since the year 2000 I’ve been going to Russia to visit her and we always make this garlic mayo cheese mixture as a side dish for dinner parties. And I cannot even being to hide my excitement with this mix. I mean first of all extra sharp cheddar is pretty much the king of hard cheeses. Right, right? You’ve got to agree with me on this one.
It is so full of flavor, I mean it’s just sharp. There’s no better way to describe it. Then there’s garlic. You know I love garlic right? Not only it is insanely incredibly obnoxiously healthy for you, it also adds a perfect bite to everything.
Then there’s the mayo. I couldn’t proudly talk about my Russian heritage without at least including a love sonnet dedicated to mayonnaise. Some don’t seem to understand, but it’s this simple; mayo just makes everything better. It’s creamy, it’s rich, it just goes well and balances out pretty much any savory food.
So when you mix up the grated sharp cheddar, with the minced garlic and the mayo, you end up with an explosive combination of amazing awesomeness. At family gatherings in Russian we would just place the cheesy mixture into a bowl for everyone to grab a spoonful (or six in my case).
Recently though it was time to to switch things up. Grandma and I decided to combine the two and create a new finger food. Talk about my new favorite appetizer and the reason I will never have room for the real dinner courses. The cheesy mayo garlicky mix, served up in cold cuts!
Brilliant or what? If you want a bit more crunch you can even add a layer of lettuce leaves below the cold cuts. Now you’ve got almost all the food groups covered. Are you ready to give this a shot?

- 10 oz extra sharp cheddar cheese, grated
- 2 cloves of garlic, minced
- 6-7 tablespoons mayonnaise
- 2 tablespoons cilantro, chopped
- 3 slices of turkey
- 3 slices of pastrami
- lettuce leaves, cherry tomatoes and avocado slices for garnish
- Mix together cheese, garlic, mayonnaise and cilantro
- Place a couple tablespoons of mixture onto turkey and pastrami slices and roll up. Cut the rolls in half.
- Place strips of lettuce on a plate with a roll on top and decorate with cherry tomatoes and avocado slices.
