Think of these baked zucchini circles with cheese as a low carb pizza, no dough need, just zucchini, mayo, garlic, tomatoes and cheese. Perfect for dinner or as an appetizer.
My maternal grandmother and I always have this incredible connection. The kitchen and cooking brought us together and we simply shined in there. We could talk on the phone for hours exchanging cooking tips and recipe ideas. Even with an 8 hour time difference I would call her regularly in Moscow and we would always gab about what we had just made for dinner. During the summers when I would fly to Moscow to visit her we would go completely bonkers together in the kitchen.
We were a non stop kitchen machine. Looking up recipes, coming up with new ones, making old classics. It was our favorite thing to do and we never tired of it. Nor did any one of the relatives ever tire of coming over for full blown multi course dinner, always with different recipes and dishes. My grandmother had one favorite cook book with all different recipes, you know one of those old school, photo lacking, small print recipe books.
And this book carried a whole gold mine of five star recipes.
I can’t remember if these zucchini circles with cheese were from the book or just one of my grandmother’s brilliant kitchen masterpieces but this has forever been a classic between us.
You slice the zucchini on a diagonal to give you more zucchini area to work with. Lightly salt and pepper and oil it, bake on one side for a few minutes until softened and then remove from the oven.
This is when the magic happens. You then top each slice with a thinly slices tomato, a mixture of mayo and minced garlic and a slice of extra sharp cheddar cheese.
Pop these back into the oven and within minute you have my all time favorite zucchini dish ever.
You can use either zucchini or eggplant in this recipe though I prefer zucchini because it’s softer, but it works well with both.
Easy to make with simple ingredients that you generally have in the fridge. Makes for a good side dish or appetizer. And these are baked — not fried — so feel free to eat a whole bunch of them. And I pretty much always do. So make sure to make lots of these as everyone is bound to love them as much as my grandmother and I always did.
- 2 medium zucchini, cut on the diagonal into ½ inch rounds (more like ovals)
- 1 tomato, thinly sliced
- 1 teaspoon minced garlic
- ¼ cup mayonnaise
- 3-4 oz extra sharp cheddar cheese, sliced
- salt, pepper to taste
- Preheat oven to 350 degrees F. Lightly grease baking sheet with cooking spray and place zucchini slices side by side. Bake for 10 minutes. In small bowl combine garlic and mayo.
- Remove baking sheet from pan, flip zucchini slices over, add salt and pepper to taste. Add tomato slice to each zucchini round then spread small amount of mayo garlic mix. Top with a slice of cheese.
- Bake 10-20 minutes, or until cheese is bubbling.
