I love it when my mom cooks for me. As the self proclaimed cooking enthusiast in the family the head chef role in the kitchen usually falls on me.
And most of the time I am more than happy to prepare meals and buzz about in the kitchen.
Sometimes though, it really is simply a pleasure to have somebody else cook for you. To come home from a long trip to a hot meal that is just waiting for you. You know what I mean right? When you walk in exhausted and you can instantly sense the aroma coming in from the kitchen – when you know something is cooking, and most importantly someone is cooking for you.
This chicken and cabbage stir fry is the exact meal that was waiting for me after one of my standard friend reunions. After eating out for a few days and cooking for my friends it was a welcome surprise to get back and not have to think about feeding myself.
This chicken and cabbage stir fry with carrots is a class simple Russian meal.
How to make my chicken and cabbage stir fry recipe:
For this recipe you only need five ingredients:
- chicken sausage (or other types of chicken)
- cabbage
- carrots
- onions
- olive oil
First halve and thinly slice the cabbage. Since cabbage has a lot of water moisture you can sautee it first without any oil. Once all that water cooks off, only then do you need to add a bit of oil.
While the cabbage is cooking grate the carrots and add then to the skillet after the oil has been added. While the cabbage and carrots are cooking, dice the onion.ย Cook those down for a few minutes and then move them to the side of the pan.
Add the onions and cook them until translucent. Season with salt and pepper to taste.
To minimize clean up you can remove the veggies from the pan and add the chicken sausages, or you can cook those simultaneously in a separate pan. Up to you.
If you’re using raw chicken sausages, allow them to cook through without breaking them up, and slice them into thin rounds once cooked.
If you’re using cured chicken sausages, thinly slice them first and then pan fry them.
If using chicken breasts or chicken thighs, cut into bite sized pieces and pan fry.
Serve the veggies topped with chicken sausage and garnished with green onions.
This super simply chicken and cabbage stir fry has an amazing amount of flavor. You really don’t even need any spices – the combination of the ingredients just work so well together. If you’re using chicken sausages those are normally pre-spiced already anyway.
This is one of my favorite low carb chicken recipes. And, sauteed cabbage is seriously underrated. Cabbage in general needs to make more of an appearance than simply in coleslaw or taco slaw.
It’s an amazing veggie that can be quite filling while also low in carbs. It’s incredibly high in vitamin K, C, B6, while also having high levels of manganese and fiber.
If you’re wondering how many carbs in cabbage – there are 2.3 grams of net carbs in a cup – making this a perfect filling veggies that’s low in carbs!

Recipe Variations:
- Instead of raw chicken sausage you can use cured chicken sausage, ground chicken, cubed chicken thighs, or cubed chicken breasts. You will just need to adjust the cooking time.
Recipe Tips:
- I love to buy the in-store made chicken sausage at Whole Foods. There are no artificial ingredients and it is just a mix of ground chicken and spices.
- If you have dietary restrictions make sure the chicken sausages you purchase are compliant.
- Cook the cabbage first without any oil, until the water moisture has cooked off, only then adding the oil.
- For meal prep make a big batch of this at the beginning of the week and continue to eat this for days.

- 1/2 large head of cabbage thinly sliced
- 2 carrots grated
- 2 small onions peeled and diced
- 1 pound raw chicken sausage
- 1-2 tablespoon extra virgin olive oil
- 2 scallions chopped

Heat pan over medium heat and cook cabbage until the water moisture from the cabbage has cooked off. Once that happens add 1 tablespoon oil and carrots and cook for a few minutes.

Move the cabbage and carrots to the side, and cook onions in the other side of the pan (adding more oil if needed). Once onions are translucent mix everything together and continue to cook for a few more minutes. Add salt and pepper to taste.

In a separate pan heat 1 teaspoon oil and cook the chicken sausage. Once cooked through slice into thin rounds.

Serve cabbage topped with chicken sausage rounds and green onions.

What brand or flavor of chicken sausage did you use?

Unfortunately I do not remember the brand but I do know I bought it at Wegman’s and it was their organic chicken sausage. Any flavor will work.

Great and easy. I used pre cooked chicken sausage and added a little cider vinegar. Definitely makeing again.
