A super simple low carb appetizer or light lunch. Skip the starchy wraps and use Boards Head Smokedmaster Ham as the foundation for these light smoked ham roll ups with pesto, cucumbers, avocados and alfalfa sprouts.
I love smoked food. Any smoked food. Chicken, fish, cold cuts, you name it, I love it. There’s just something about smoked food that to me it always has a deeper and more developed flavor.
You just can’t achieve that same flavor profile any other way. I would love to have my own smoked at home. If I had one of those you bet I would be make and sharing smoked food recipes day in and day out. Don’t even get me started.
Until I acquire said smoker, I’ll have to settle for store bought smoked food. My latest smoked food purchase involved Board’s Head SmokeMaster™ Black Forest Ham. Knowing how much I love smoked foods I knew I would love this one too. This is a new Board’s Head product that is naturally smoked with imported German beechwood.
I have recently grown to like ham more and more. I always loved the Italian and Spanish versions of cured ham, but now, I have finally come around and started to really enjoy the American version of cured ham.
The Board’s Head SmokeMaster™ ham is a nicely smoked ham with a distinct flavor. To really make that flavor shine and stand out I didn’t want to overpower it with bread or anything too starchy. Instead I chose to make ham roll ups with avocado, pesto, cucumber and alfalfa sprouts.
I love the combination of those four together and when tightly wrapped up in thin slices of ham roll ups, this dish makes for a perfect low carb appetizer or light lunch. Just mix the filling together in a bowl, adding in any other ingredients you have on hand (spinach or arugula would work well here, as would additional fresh herbs or other veggies).
To complete the ham roll ups, add a few dollops of filling to the ham, and then roll up with your hands. Slice the smoked ham roll ups in half and you’re done.
A no cook, minimal clean up, light and refreshing meal is ready for you. These ham roll ups are perfect for summer or early fall, when you’re trying to catch those last few days of warmth and shouldn’t be spending that time hovering over the stove or heating up the oven.

This recipe is so simple and clever, I really like the idea of making a deliberate meat-out sandwich.
Why specify vegan pesto when this is wrapped in ham??
Vicky says
Thanks! I specified vegan pesto for those who are eating dairy-free. Otherwise you could certainly use regular pesto.
