Ok so remember how I went on and on about how much I love California and how it’s the best state ever?
Well, Oregon has come in at a close second. D and I spent 10 days exploring both Portland and the coastal cities in the state and loved every minute of it.
The rocky coastline is incredible and I could spend hours just watching the waves hit all the rocks by the sand. It is simply mesmerizing. Portland as a city is pretty interesting too. Lots of great food, coffee, live music venues and the nicest Japanese Garden outside of Japan (as we discovered ourselves).
But where the state really shines is the people. The people of Oregon have been so incredibly friendly, striking up conversations with us everywhere we go and really just going out of their way to make us feel comfortable.
Out of all the states we have been to so far, this might just be the friendliest. I was expecting a bit of Southern hospitality that you hear so much about from the Southern states, but instead we have experienced this out on the West coast.
So what’s this got to do with a smoked salmon savory breakfast quinoa salad with avocado and eggs?
Well I am just as excited about this new dish of mine as I am about my time in Oregon! If only I could have been enjoying this for breakfast every day I would be even happier.
I love having eggs and avocados for breakfast. I think a high protein, low carb, low sugar breakfast is the way to go and the best way to start the day.
I mean to say it’s the only acceptable way to start the day if you ask me. I never ever start my day with a sweet carb loaded breakfast. I never crave it and I know it’s not good for me so I don’t go anywhere near it. High carb breakfast, from what I remember from my cereal loving days in child, just have you feeling bleh, and low energy immediately as the day starts. And that’s not what I need. I need a high protein energy filling meal to get my up and ready!
With this smoked salmon savory breakfast quinoa salad recipe, we’ve got the protein from the quinoa, eggs and salmon as well as lots of vitamins and nutrients from the avocado and arugula. A powerhouse meal if you ask me.
Your body will feel energized and pumped up to start the day after a full bowl of this goodness. Now who would’t want that!?
I’m all about the light sprinkling of quinoa in my salads nowadays. I don’t want to overpower the other ingredients but just add a little sprinkling of it. The flavors in this smoked salmon savory breakfast quinoa salad all complement each other perfectly and blend well together for magical food harmony in your mouth.
