I am not normally a baker. I am more of a cook. Savory dishes are my specialty. I myself am not into sweets so never need to personally fulfill a craving with home baked treats.

The people around me though, oh how they love freshly baked desserts!

And there’s just something about the holidays that makes baking so much more appropriate. The smell of freshly baked goods in a warm holiday decorated house just makes the house complete. The aroma that fills the entire kitchen when something is baking is simply magical, even more so when it’s cold outside and nice and toasty warm inside.

I may not have the biggest sweet tooth, but I can’t deny the warmth I feel in my own heart when I make freshly baked goods for my family and loved ones, which I know they will fully appreciate.

For many baking is simply therapeutic, and I get it –Psychologists have found that baking for others promotes a sense of wellbeing and benefits the baker as much as, if not more, the recipient.

How amazing is that?

When you’re baking, even if it’s for others, if you’re doing it with love, it fills you with as many positive emotions as it will the person receiving the baked goods!

And since I love to share my love of cooking with everyone around me, this is the time of year I find myself baking.

And when I’m baking with flour – there’s only one brand I use – Bob’s Red Mill. I stick to gluten free cooking, and Bob’s has me covered with their 1-to-1 gluten free baking flour. You can use this as a perfect one to one substitute for regular wheat flour in all gluten free recipes. As always, high quality ingredients lead to high quality finished goods!

As you can see from the label, the ingredients include white rice flour, brown rice flour, potato starch, sorghum flour, tapioca flour and xanthan gum. The guys over at Bob’s have figured out the perfect ratio of all of these so you do not need to purchase all six different flours to make a gluten-free flour substitute. This baking season I chose to make Vegan Coffee Pecan Pie Bars that are also gluten-free and refined sugar free. These are made with only seven ingredients and ready in no time; a dessert the entire family will love.

For the pecan pie bars crust I combined coconut oil and maple syrup, beating those until smooth, then added in some dissolved instant coffee powder in water for a richer, deeper flavor. After the addition of Bob’s gluten free 1-to-1 baking flour and baking powder and pecan pie bars crust is ready to be patted down in a baking dish or pie pan. This goes into the oven for just 15 minutes while you work on the pecan pie bars topping.

For the topping I first made my vegan caramel sauce made by boiling coconut oil, maple syrup and sunflower seed butter before adding in toasted chopped pecans.

Once the pecan pie bars crust is baked, you top that with the caramel nut mixture and set to cool.

Cut into bars and enjoy!

I taste tested a batch on my parents recently and they were quite pleased. Beyond pleased I would say! There’s nothing quite like seeing the look of pure joy on someone’s face after they take a bite out of a freshly baked homemade delicious treat!

If I could really share my love for baking with one person this holiday season it would be with my oldest and closest friend. This friend lost her mother this year, with whom she always baked.

We live on opposite sides of the country so I can’t just call her over for dessert, but I am dedicating this post and recipe to her. The holidays can be a particularly difficult time of year for those of us who have lost loved ones, so every bit of support and affection can make a big difference in the lives of those around us who are hurting. Sometimes the easiest way to show you care is by simply baking up something wonderful and sharing it with a friend or loved one. And that’s exactly what I would love to do with these Vegan Coffee Pecan Pie Bars.

At the end of the day even the smallest acts of kindness can bring such joy to those around us. Something as simple as freshly baked cookies or dessert bars can give someone a much-needed pick-me-up during a hard time. This holiday season I urge you to share your love with those around you with the gift of freshly baked treats (just like these coffee pecan pie bars)!

Ingredients
For the crust:
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1 cup bob's red mill gluten free flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon instance coffee added to 1 tablespoon boiling water
For the topping:
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 tablespoons sunflower seed butter
  • 2 cups chopped toasted pecans
Instructions
  1. Preheat over to 350 degrees F.

    Beat ¼ cup coconut oil and ¼ cup maple syrup. Add instant coffee dissolved in water. Mix.

    Add flour, baking powder and mix. Form into a ball.

    Pat the dough down on a 9 inch pie dish, or a rectangular baking dish.

    Bake for 15 minutes

     In a small pot bring ¼ cup maple syrup and ¼ cup coconut oil to a boil over medium heat, add sunflower seed butter, and cook for 2-3 minutes, stirring frequently.

    Add pecans and mix.

     Top crust layer with pecan, caramel mix. Allow the crust to cool, before cutting into bars.

Optional: Sprinkle with coarse sea salt.

      If you are not following a vegan or dairy free diet you could use butter instead. If you are vegan, I would try this with a neutral olive oil, though I am not sure how it will work out.
