Why have I just recently discovered the magic of coconut flakes? Seriously, where have they been all my life. They’re simply wonderful. When baked, oh my, they are light and crispy and everything seems to be fooled by their deceiving nutty, yet not made from nuts taste. Well by everyone, I mean by parents and their friends who are visiting from Moscow.
Probably not a large enough sample size to make enough extreme conclusions but still, what definitely is conclusive is that this pretty little granola jar was gobbled up in less than a day.
Every time I looked over someone else had their hand in the jar, walking around the house munching and crunching on this awesome best ever snack.
Seriously though – granola, needs nothing else – when it’s made from scratch, at home, and comes out fresh from the oven, sits for a bit to lightly crispen up as it cools – it’s the best snack ever. You can’t have just one bite.
It never happens.
You always needs more.
If you need to sprinkle it on something and you’re not ready for a ziplock bag full of just granola (don’t worry you’ll get there) then make a vegan spinach acai smoothie bowl asap.
Those two are inseparable best buds right there.
Granola is usually made with nuts, but then I got to thinking – what about all those people out there with nut allergies? They can’t possibly be forced to give up their delicious treat just because of a few dietary restrictions right?
Right.
Coconut flakes to the rescue.
Now I’m not even kidding when I say this nut free granola recipeย might just be my new all time favorite granola recipe ever.
I know, I pretty much say that everytime I make aย new granola recipe, but this time, this right here might be the winner; this vegan nut free granola recipe is simply amazing!ย With tons of different powerhouse seeds, we’re looking at sunflower, pumpkin, chia, hemp and those white fluffy flakes, the flavors here are incredible.
It’s not too heavy, not too sweet, not too dry, just what it should be. Packed with all sorts of vitamins and nutrients and minimal sugar (just two tablespoons of maple syrup in theย whole batch) theย nut free granola recipeย makes a perfect afternoon of guilt free snacking.

- 2 cups gluten free oats
- 2 tablespoons chia seeds
- 1 tablespoon hemp seeds
- 3/4 cup coconut flakes
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 3 tablespoons quinoa flour
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil
- 2 tablespoons coconut cream
- 1 teaspoon vanilla extract

Preheat oven to 350 degrees F.

In a large bowl combine oats, chia seeds, hemp seeds, coconut flakes, quinoa flour, sunflower seeds and pumpkin seeds. Mix.

In a small bowl combine coconut oil, maple syrup, coconut cream, vanilla extract. Mix until smooth.

Mix the wet mix into the dry mix until thoroughly coated.

Place on parchment lined baking sheet in a single layer.

Bake for 20-30 minutes, stirring half way through.

In place of quinoa flour you can use regular all purpose flour (or cassava flour, or gluten free flour)
