Super hearty and healthy vegan power bowl made with roasted sweet potatoes, kale, red onions, charred chickpeas and topped with a creamy cannellini bean dressing. Gluten-Free too.
This was my first recipe made using a meal delivery service. This one specifically is called Terra’s Kitchen and the way it works is that you choose a set of recipes created by their culinary team, they do all the prepping, dicing chopping for you and you wait for the climate controlled vessel to arrive at your door.
Their motto is that you will have your healthy meal on the table in 30 minutes or less.
Now there are a lot of companies similar to Terra’s Kitchen nowadays, and this was the first of these that I was trying.
Was I skeptical? A little bit I have to admit. Why, you ask? Well you know I cook all the time, so I wasn’t sure how I would feel about a food box delivery.
Let me just tell you this – I have been pleasantly surprised. I am jumping on the meal delivery service bandwagon.
It feels nothing short of super refreshing and convenient to have all your ingredients prepped, chopped, portioned, etc and delivered in nice individual containers.
I came home from a busy day out to see my Terra’s Kitchen vessel waiting patiently for me on the porch.
Upon opening the two latches you will find various compartments in which there are all your containers for creating the recipes. In my batch I ordered three separate meals – a vegan power bowl, spicy honey lime chicken + edamame rice and Thai grilled chicken salad.
I loved seeing everything portioned off and already prepped.
I mean I cook all the time, several times a day, and I must say that kitchen prep can take up an incredible amount of time.
All that dicing, and chopped and peeling, it adds up. And then the mess created. That also adds up.
This right here minimizes the time prepping, almost entirely eliminating it, and that is wonderful.
When you come home after a busy day, this is the kind of kitchen situation that’s going to get you excited about cooking a home cooked meal.
Another thing I love about Terra’s Kitchen is that you have a wide assortment of meals to choose from, and this allows you to experiment with different flavors and tastes without having to commit to buying a full on Thai pantry set for example.
The recipe that I’m sharing today is for a vegan power bowl with roasted sweet potatoes, red onions, kale, charred chickpeas and an uber creamy cannellini bean dressing.
I love a good vegan power bowl and especially loved this one being grain free and veggie heavy. I’ve made kale chips in the past but never roasted kale in a vegan power bowl so I loved the crispy kale leaves in combination with the smooth and soft sweet potatoes, sharp onions and hearty chickpeas.
Best of all here I love love loved the cannellini bean dressing. I have never made a dressing with white beans and loved how creamy and smooth this was while still being high protein and healthy.
This recipe for this vegan power bowl literally came together in 25-30 minutes with minimal prep required as most of the ingredients were all ready to go!
So I must say while I was skeptical at first I was a huge fan of the Terra’s Kitchen meal delivery service. I think this is the perfect option for those who are still interested in cooking and exploring various cuisines, while being short on time or finding cooking completely from scratch to be a bit overwhelming and time consuming.
I fully enjoyed my vegan power bowl as well as the other two meals in my vessel.

- 3 tablespoons olive oil divided
- 1/2 teaspoon cumin
- 14.5 ounces sweet potato spears
- 3 ounces curly kale
- 2 ounces red onions
- 6 ounces canned chickpeas
- .2 ounces brown sugar
- 1/2 teaspoon crushed red pepper flakes
- 6 ounces canned cannellini beans
- .5 ounces apple cider vinegar

Preheat oven to 400 degrees F.

Chop sweet potatoes into cubes and roughly chop kale.

In a large bowl toss sweet potatoes and red onions with 1 tablespoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper and 1/4 teaspoon cumin. Place on a baking sheet in a single layer and cook for 10 minutes.

In the same bowl toss the kale with 1/2 tablespoon olive oil, and a pinch of salt. Place on a baking sheet and cook for 10 minutes, in the oven with the sweet potatoes.

Heat a cast iron pan over medium heat. In a bowl combine chickpeas, with brown sugar, crushed red pepper flakes, salt and pepper to taste. Mix.

Add 1 tablespoon olive oil to cast iron pan. Cook chickpeas over medium-high heat for 8 minutes, stirring occasionally.

To make the dressing in the blender combine cannellini beans, 2 tablespoons warm water, apple cider vinegar, 1 tablespoon olive oil, salt, pepper and cumin to taste. Blend until smooth.

Serve bowls with sweet potatoes, red onions, kale, chickpeas and topped with cannellini bean dressing.

I’ve been debating trying out a meal delivery service for a while, but have been hesitant for the same reasons that you were. This is my first time hearing of Terra’s Kitchen but meal looks absolutely incredible and definitely right up my alley!

Yea I always thought it wouldn’t be for me since I love to cook and experiment in the kitchen already but it is super nice to have everything chopped and prepped!

I’m so intrigued by meal services like this, and I love seeing a review from the point of view of someone who cooks all the time. I have to admit, I really love the idea of having all my ingredients prepped and ready to go. This salad looks like a great, healthy weeknight meal!
