White Chocolate Macadamia Cookies

Skip the standard chocolate chip and make white chocolate macadamia cookies instead! Nutty and smooth. Soft and chewy.

I just realized I haven’t posted a cookie recipe in a while so figured this would make for a good Friday post. These were requested by D – apparently white chocolate is his favorite, and now these white chocolate macadamia cookies are his favorite cookies.  I suppose I can’t judge considering I don’t even like chocolate – but I think that even if I did, white chocolate wouldn’t be my top choice.

Guess it wouldn’t come in last place though… That’s reserved for dark chocolate. So I guess that leaves milk chocolate. Though I am surprised by the number of people I have met who claim to hate white chocolate and don’t even consider is real chocolate. What’s up with that? What do you think? White chocolate yay or nay? How about the dark chocolate lovers? That is said to be the healthier chocolate choice. And I’ve even read that dark chocolate can be flat out healthy for you – who knew? You might even be able to get away with have a sliver or two of dark chocolate and still penciling that into your list of healthy foods consumed that day. I doubt white chocolate will ever make it into the healthy box though.

What was your chocolate of choice when you were little? For me, that isn’t even a question I need to think hard about. I remember when I was little I used to love the kinder surprise chocolate eggs. I would just love the creamy milky tender taste of that chocolate. It was everywhere and I wanted it all the time. Not sure how popular those were in the US, but they were all over the place in Australia. Now that is good chocolate. Anyhow, back to cookies. Original recipe called for 3/4 cup white sugar but I discovered that I only had 1/4 cup white sugar. Uh o… What to do? Just add brown sugar to make up for it. Taste will be different but in this case I don’t think the cookies tasted any worse (I’ve made them before using all white sugar).

Main thing is to stay calm – even if you’re halfway through a cookie recipe and realize you barely have 1/2 the amount of flour required (just add cocoa and make chocolate cookies)!

Ingredients
  • 1/2 cup butter softened
  • 1/4 cup white sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 oz white chocolate chips
  • 3-4 oz macadamia nuts chopped
Instructions
  1. Preheat oven to 375 degrees F.
  2. Beat together butter and sugar until smooth. Add egg and vanilla extract.
  3. In separate bowl mix flour, baking soda and salt and stir into the butter mixture.
  4. Add white chocolate chips and macadamia nuts, stirring to combine.
  5. Place cookie dough balls on parchment paper and bake for 8 minutes.
