I just spent an incredible week in Italy with my parents and D. Imagine the gorgeous cliff side villages of the Cinque Terre to narrow lanes and canals of Venice. Italy is simply beautiful and utterly delicious.
Too many cappuccinos, pizzas and glasses of sparkling Prosecco to count wihtin just 1 week of stay in Italy.
And now, after all that fun I’m sick. More accurately D caught a cold and now I’ve caught the same one from him.
What a downer, right?
I’m just tired, achy and generally feel bleh.
What I really need is a huge pot of hot steaming soup.
So, I came up with this tomato chicken soup with cherry tomatoes and white beans recipe before falling asleep last night. This is what I do before bed — brainstorm recipe ideas.
And this morning I made a pot of home made chicken broth with an entire whole chicken and then threw this soup recipe all together.
Fresh spring cherry tomatoes are simply bursting with flavor as are the fresh sharp herbs.
Soft shredded chicken and aromatic chicken broth can’t be beat.
White beans seemed to be a good addition to the mix, to make the soup with cherry tomatoes even healthier and more filling.
This was exactly what I needed today and I won’t even deny that I ate at least 3 bowls of this tomato chicken soup with cherry tomatoes today.
And then made a whole new batch – so I’d have some more soup for tomorrow.
I love soup all the time! I know I’ve said this more than once, but especially when I’m sick, this tomato chicken soup with cherry tomatoes and white beans is really what I need. it just soothes your whole body.

- 4 cups home made chicken broth
- 2 cups shredded chicken
- 20 cherry tomatoes halved
- 1 tablespoon olive oil
- 1 small onion halved and thinly sliced
- 5 cloves garlic thinly sliced
- handful basil slivered
- 1 tablespoon vegan basil pesto
- 1/2 - 1 can cannellini beans

Heat oil over medium heat in a pot. Add onion and cook for a few minutes until translucent. Add garlic and cook until aromatic.

Add tomatoes and cook for a few minutes more. Add salt/pepper to taste.

Add chicken broth and bring to a boil. Add pesto and white beans. Reduce heat and simmer for a few minutes.

Add shredded chicken and cook until chicken is heated through.

Serve garnished with fresh basil.

Your soup looks so flavourful! And by adding a few tbsp of quinoa, it would make a complete meal that I would serve to my kids for lunch. Thanks for sharing.:-)
