Paleo Chicken with Red Pepper and Almonds is a seven ingredient recipe made with chicken thighs cooked in a super creamy roasted red pepper sauce with almonds and coconut milk. The ultimate dinner party meal. Easy to make and fit for a crowd. I’ve made this recipe a handful of times now and it is always a hit. Everyone loves this Paleo chicken dish and raves about it and asks me to send them the recipe. Well it was time I published it here for everyone to have access to it.

Roasted red peppers when blended in the food processor and mixed with a few other key ingredients transforms into romesco sauce – a most decadent and creamy sauce that is simply the best. This works with chicken, fish, as a dip, as a spread on flatbread, you name.

Roasted red pepper sauce is just the best if you ask me.

You can make your own roasted red peppers at home, either over a gas flame or in the oven, and yes this can be a time consuming labor intensive process, so no judgement here if you buy the canned ones instead.

I have made my own roasted red peppers from scratch and I do find the superior to the canned ones, but sometimes you just don’t have the time. It’s like home made broths and stocks, always better home made, but sometimes store bought will just have to suffice.  Some of my favorite roasted red pepper sauce recipes include red snapper fish with romesco sauce recipe, salmon red rice veggie bowls with roasted red pepper sauce, vegan roasted red pepper sauce pasta, and creamy vegan roasted red pepper sauce soup.

I just cannot get enough of roasted red pepper sauce and this roasted red pepper Paleo chicken recipe is seriously addicting. It is so creamy and flavorful that you will just want to eat it by the spoonful. I know I always do. I love serving this Paleo chicken with a side of rice pilaf so that the rice can also absorb all that roasted red pepper sauce goodness.

What I love adding to the roasted red peppers to make them super creamy is coconut milk. I love cooking with coconut milk and find it to be the best substitute for cream in dairy free recipes.

And speaking of coconut milk, today’s post is actually not dedicated to this roasted red pepper sauce chicken at all — this post is actually all about my friend Regina’s e-cookbook dedicated to cooking with coconut flour!

Seven ingredient roasted red pepper chicken is made with chicken thighs cooked in a super creamy roasted red pepper sauce with almonds and coconut milk. The ultimate dinner party meal. Easy to make and fit for a crowd. Paleo, Gluten-Free and Dairy-Free.

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 2 pounds boneless skinless chicken thighs
  • 2 jars roasted red peppers
  • 1/2 cup coconut milk
  • 3/4 cup toasted sliced almonds
  • 1/2 tsp salt
  • pepper
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic
  • 2 tbsp lemon juice
  • 1 lemon zested
  • For garnish: additional lemon zest sliced almonds and handful chopped cilantro
Instructions
  1. Heat olive oil in large pan (preferably cast iron) over medium-high heat. Add chicken thighs, placing them side by side, not overlapping once oil is hot.
  2. Cook on each side until browned.
  3. While chicken is cooking to the food processor add roasted red peppers, coconut milk, sliced almonds, salt, pepper, 2 tablespoon olive oil, garlic, lemon juice and zest. Process until pureed and smooth.
  4. Once chicken is browned remove from pan.
  5. To the pan add the roasted red pepper sauce and bring to a boil. Reduce heat, add chicken back to pan with the sauce and cook for an additional few minutes until chicken is cooked through.
  6. Serve garnished with additional lemon zest, chopped cilantro and additional sliced almonds.
