I’m talking caramelized and roasted thick sliced of cabbage smothered in a tahini mustard sauce. If you haven’t made those yet you’ve got to asap.
That was my favorite side dish for a while, until this recipe came along. Now these vegan roasted broccoli steaks are my new favorite side dish slash full on dinner. Once I made this and had a bite I wanted the whole tray and kind of hoped D didn’t like this, so I wouldn’t have to share. I ended up bribing him with an impromptu dessert to make sure he opted to only have half of his portion of these broccoli steaks.
Hey, a foodie’s gotta do what a foodie’s gotta do, to get as much of the best food ever, right? And I did make him some awesome vegan dessert quesadillas to make up for eating almost all of the broccoli steaks.
I’ve been seeing food bloggers rave about roasted broccoli here and there, but I always kind of thought they were exaggerating their enthusiasm. I mean I do love broccoli (even in it’s most simple form of steamed and dipped in mayo – it’s a Russian thing, or well maybe just me), but would roasted broccoli really change my world?
In one word – YES.
Roasted broccoli is the cat’s pajamas – hands down the best way to make a veggie ever. The stalks get crunchy while the tips are nicely charred and browned with the best smoky taste ever. Roasted broccoli steaks are the way to go.
And then there was that one time I made a creamy vegan broccoli soup with pistachios which added a much needed deeper nutty element of flavor so I never a sprinkled of crushed pistachios would take this dish to the next level too.
But what to do for a sauce? My go to is always always always tahini. Nut butters step aside – tahini is my true love. When mixed with a few other ingredients it simply turns into a magical sauce – perfect for quinoa buddha bowls, vegan veggie steaks, soups, you name it.
So while those broccoli steaks are roasted in the oven, get the tahini sauce ready, and if you want to go a step further, lightly pan fry those pistachios with salt and pepper. There’s a brand of pistachios that makes salt + pepper roasted pistachios and they are seriously addictive.
Since I couldn’t find those in Bolivia I did the next best thing — cracked a bag of raw pistachios and lightly pan fried them with salt and pepper myself. The spice is perfect.
Serve the broccoli steaks with a generous sprinkling of crushed pistachios and a drizzle of tahini sauce. These make for a perfect side dish, or if you love them as much as I do a full on dinner meal.
If you ask me I need nothing more than a full tray of these broccoli steaks for full on foodie happiness.

How to make broccoli steaks
- 1 pound broccoli cut into thin steaks (1/4 - 1/2 inch thick)
- salt pepper, paprika to taste
- 1 tablespoon extra virgin olive oil
- 10 cloves garlic crushed
- 1/4 cup crushed pistachios
- For the Sauce:
- 1 tablespoon tahini
- 2 tablespoon extra virgin olive oil
- 1 tablespoon lime juice
- 2 cloves of the roasted garlic mashed

Preheat oven to 450 degrees F.

In a bowl combine broccoli with salt, pepper paprika, 1 tablespoon olive oil and crushed garlic.

In a single layer place broccoli on baking sheet with the crushed garlic.

Roasted for 30 minutes, flipping over halfway until charred and browned.

In a bowl combine all the ingredients for the sauce (adding in 2 cloves of the roasted garlic) and mix, until smooth.

Serve broccoli steaks drizzled with tahini sauce and sprinkled with crushed pistachios.

Oh My Gosh! I am so excited I found your site! I just found out that I have a ton of food allergies and now I am basically limited to a vegan/gluten free diet.
