So I have this odd habit of buying a lot of random things at the grocery store. Whenever I go I usually have a list written, ready in my hand, yet somehow the second I step into that magical food land, the list is gone and I am quickly throwing a whole handful of random food items into the cart.

My friends can confirm this behavior. This is probably one of the reasons they try to keep me away from the grocery store on any group trips. Once I’m there I can’t spend less than $100.

I just become consumed with a need to buy everything I see. I suppose it’s a good thing this only happens to me at the grocery store, and not the department store. At least the damage can only be so high when we’re talking food shopping.

So that’s how I ended up with a bag of red rice and a TruRoots lentil trio (a bag of sprouted black, green and brown lentils). I had never even tried red rice before, nor heard of sprouted lentils. Yet they seemed like an excellent purchasing decision at the time.

Yesterday finally, when brainstorming recipe ideas I decided it was time for the red rice and lentils to come together. A vegan winter rice salad recipe quickly formed in my mind. I have made a wild rice squash salad in the past, so was working off of that.

As the rice was simmering – the red rice takes a whole 40 mins to cook, but not to worry that’s idle time, or lentil and sauce making time. The lentil trio literally was ready in 5 minutes and the sauce took a few mins of creating before being blended all together in seconds. For sharpness I added chopped arugula to the rice and for a bit of crunch toasted sliced almonds.

Once the rice cooks mix that with the lentils, and chopped arugula. Split up into bowls, sprinkle with almonds and drizzle with cilantro tahini dressing.

By the way new favorite dressing alert. By now you’ve probably seen my plethora of tahini based dressings. Let’s reminisce shall we? There was the avocado tahini drizzle to go along with the vegan butternut squash and cauliflower quinoa, and the pesto tahini with vegan quinoa roasted veggie buddha bowls. You get the idea.

And now it’s a cilantro tahini dressing with coconut milk, garlic and olive oil. Simple, yet the ultimate flavorful dressing. Nutty, creamy, sharp, simply the best. This vegan winter salad was a bit hit with my parents last night and will be requested again shortly, I can see it already. Perfect to pass the cold winter days.

And since I’m still in the winter holiday spirit today I am happy to announce that I am hosting a giveaway with 34 other food bloggers. We’re giving away a $700 Amazon Gift Card. Enter Below!

I would like to get a Kitchenaid Mixer with attachments so I can make new recipes. I want to cook new foods so bad.

  2. Linda Bradshaw says

I am so excited about finding so many great bloggers who do food and recipes! I can’t wait to hit every blog and start pinning some great recipes. I have been wanting to make a lifestyle change and I see so many great recipes which can help the whole family. Thank you all for coming together for this so I could find you all. 🙂

    • Vicky says

So glad to hear that Linda! My blog is packed full of healthy home made recipes so if you’re looking for a life style change you’ve come to the right place. Let me know if you have any questions about a specific recipe!

  3. says

This sounds delicious! Much better than the salads I’m eating, and I’ve never heard of red rice before. I barely started eating healthier, so I’m definitely pinning this one!

    • Vicky says

This was my first time cooking red rice and I love the texture of it! I am sure you can find it in the specialty or healthy food aisle of your grocery store, or many at some place like Home Goods or TJ Maxx in their food section. Thanks for pinning the recipe!

  4. says

I really like the sound of this salad! Kind of in love with lentils, so that alone has me sold. Sometimes it’s just really really hard to stick to your list at the grocery store! I buy random ingredients and then scramble to make a recipe that includes them. Glad I’m not alone!

    • Vicky says

Aren’t lentils the best? And this was the first time I cooked with sprouted lentils which I had not bought before. Yep you’re not alone with the buying of random ingredients!

  5. Amber B says

Love this winter salad! My family’s been eating more salads and power bowls for meals and this (and the referenced recipes) look so good! I’m really lacking a good blender so with an amazon gift card a blender is a must!

    • Vicky says

Thanks! I looove making power bowls – so hearty and delicious. A good blender is great – mine isn’t so good either – always have to scrape down the sides to get the sauce to fully blend. If you have a food processor you could use that to make the sauces as well – I find that works better than the blender even.

  6. ERIC M. says

No offense but these kind of contests are ridiculous in the sheer number of entries. I wish good luck to those willing to do all of this work.

    • Vicky says

There are 166 ways to enter the giveaway but you do not need to enter all you them. You can enter as few times as you like, and still have a chance of winning.

  7. Rita M says

$700 at Amazon would not be a problem… Books galore, items for my granddaughter & the kitchen gadgets & appliances my husband loves to buy!

  8. Debra S says

What would I get if I should win? First of all, something to play music. I think I’d adore the Echo thingy. I love to take long hot baths all winter and read and have candles and music. But I’m without any right now. Every radio is gone… and I do not own a smart phone or pay for any music. I have two great stations here… and echo can also do some free streaming too. Then I’d probably get things I need for the house. Some rooms need to be repainted, etc. Really bad…

  9. Eva Vida says

I’m sure I would buy some quest bars for my daughter and a kindle for me.I would buy something for my partner as well and our cat would get a nice cat bed or scratching pad.Thank you for the chance.
    The salad looks amazing!

  10. says

This sounds delicious! I am definitely going to try it out.
I am the worst for buying random things at the grocery store, so I completely understand! I am trying really hard to stick to my lists to save money.

  11. Veronica L says

Three of my sons have birthday coming up in a few months so I would use it towards their gifts 🙂 Thanks for the chance!

  12. Lisa Konieczke says

I would spoil our Home by purchasing items to redecorate. Like new curtains, area rug, new coffee table, etc.

  13. says

This salad looks amazing. Thank you for giving me another recipe to make with my tahini, the container is large and there is only so much hummus I make!

    • Vicky says

Thanks! Tahini is the best — if you’re looking for more tahini recipes I’ve made a few other sauces and even sweet truffles with them that you can find on the blog!

  14. Kelly Nicholson says

  19. judy kennedy says

I would first buy a bag of red rice which you cant get near me and some Tahini. Then I would get a tablet for music when I am in the bath.

    • Vicky says

Yes red rice can be hard to find it seems! I was able to buy at bag at Home Goods or TJ Maxx, but have not seen it in the grocery store.

  20. Nichole says

  22. Ann Johannsen says

My laptop has been acting up and I really need to replace it soon.

I love all the ingredients in your recipe. Not sure if I want them all at the same time, but I think I’ll try it one of these snowy winter days.

    • Vicky says

Thanks! Trust me the ingredients all combine perfectly in this dish, even if they might sound odd together at first!

  27. says

LOVE LOVE LOVE this salad dressing! I previously commented on this recipe, but I am returning to say that after making this dressing . . . I am in love. The flavors are stunning. Thank you!

  28. shannon fowler says

I would probably spend the 700 on things to help us around the house. we moved so many times that we never got a lot of cooking things and basic tools most households own

  29. says

I would spend the giftcard on dry ingredient items like coconut oil, nuts, dried fruits, etc! I would also use it to buy products from ethically concerned and sustainably-minded companies like Beyond Meat and VeganEgg! I live in the city of Baltimore and there are so many nice vegan dining options around, but being a young student trying to pave my own way, my my goal for the year is to stop dining out and thoughtfully make my own meals while focusing on learning more about nutrition.

  30. says

First of all, lovely recipe, I will definitely come back to get this recipe to try it again. Looks lovely. And with 700 $, I would use it to buy something that can aid me with my goals and work in gardening. But not limited to bc one can do quite a bit with $700 !

  31. Noelle Carroll says

This recipe looks very yummy, I cant wait to try it myself! I love cilantro anything!
And I would buy lots of diapers and baby toys with $700 at amazon. My daughter is 6 months old!

  32. Angela A Simmons says

I been a vegan for little over a year now. I love the pinterest suggestions on the raflecopter. Im definitely going to try out this salad it looks amazingly delicious! I’m 14 weeks pregnant and still vegan strong. For some reason fruit isn’t agreeing with me lately so I have been juicing allot of veggies and making lots of delicious salads with quinoa, nuts and seeds for my protein. If I were to win I would use the money to get a couple baby items for the little one and to extend the rest of my organic garden. What ever I have left after that would be used at whole foods for more veggies and grains.

    • Vicky says

Hope you enjoy the salad! That’s incredible that you have been able to stick to the vegan diet all throughout your pregnancy! Congratulations!

      • Angela A Simmons says

Thank you <3 I just noticed the prize is an amazon card, I love amazon! In that case I would get a new blender so i can make yummy sauces for my salads & a mamaroo baby rocker.

  33. Judith R. says

If I won, I’d give half of the gift card to my daughter on her birthday and half of the gift card to my son on his birthday.

  34. Mary Beth Elderton says

Your Winter Salad looks wonderful! I just got some red rice and have recently developed a small obsession with lentils–YUM! As for Amazon money—I would finally buy a high power blender. I really need one.

  35. Kay says

Delicious looking salad! I’m always looking for new twists on salads. Definitely need to try this one. As for what I’d do with a $700 Amazon card — hmm — I’d buy a new kitchen cart/island I’ve been eyeing, a Stella craft light, some books, and some other things that I’m not thinking of at the moment!

  36. Diana says

Ooh $700 on Amazon…buy cookbooks of course! I also order lots of GF foods that I cannot find in my local Wyoming grocery stores. Thanks for the wonderful giveaway.

  37. Yana says

Wow, tahini sauce won me forever. 🙂 In our home tahini is a much in every possible meal.
I would love to buy finally a dehydrator. My kids will love it, instead of spending on dry fruits and veggies especially in the winter.

  38. Lynn M says

That salad looks tasty. I may have to try it. As for the Amazon card, if I won, it would translate into gardening supplies and books so I could learn how to be a little more self-sufficient.

  39. Kayci S. says

If I had $700 to spend on Amazon I would buy some nice new clothes for my hubby and I. I know we could use some. I would probably buy something fun for our 2 small dogs too 🙂 Thanks for the chance to win!

  40. bunkie says

I would first pick my chin up off the floor…then….buy some new pots and pans, stock up our pantry, and purchase a bunch of books! What a great deal!!!

  41. Delma Luna says

If i won the $700 Amazon gift card, I would have Christmas covered for this year. I would get some things that I’ve been waiting on as well.

  42. says

I love blending my grains, but the most difficult part is the varying degree of cooking times! A while back I combined dry black rice, brown rice and brown lentils in a mix and then I always cooked it in my crock pot recipes. I found that, even though they are all supposed to cook for different lengths of time, by slow cooking the heck out of them I got to enjoy all the variety with none of the weird scheduling!

As to what I could spend that Amazon Gift Card on…I buy all my organic dry good through Amazon already. Nuts, seeds, grains, nut butters, and so much more! I would probably splurge on a fun kitchen toy or two as well…or perhaps a better camera for which to take food pictures with!

PS: I saw a comment about substitutions for cilantro haters and I am considering trying out basil…thoughts?

    • Vicky says

Love the idea of cooking all the grains together in the crock pot – have not tried that yet : ) And yes I think basil or parsley instead of the cilantro will both work well!

  43. says

This salad looks delicious, cannot wait to try it. I have a very long Amazon wish list, comprised 90% of books/ebooks, so I would probably buy a bunch of books and maybe something for my kitchen to splurge on, like a new blender.

  44. Brandy Goodloe says

This salad sounds amazing! Gluten free is a bonus. I have tahini at home so I’m going to make it. I would spend the Amazon money on a new range. One big item. I need a new one. I love to cook but my oven doesn’t…lol.

  45. John Steele says

I need a new TV and would probably get a cheap bluray player, soundbar, a Chromecast and some blurays to watch on it.

  46. MANDY DOHERTY says

It’s my daughters wedding in July and I’ve been given the task of making her wedding cake so I’d get some new cake tins and I’ve seen an awesome cake topper that would be perfect for it.

  47. gandolina says

I’d like to get anew tablet and a prime membership. that salad really does look great. I’dd toss in some pumpkin seeds too. i love the way they taste with avocado.

    1. Recover from fainting
    2. Check to see if I can use it via kindle
    3. Thoroughly enjoy completing my wish list

  49. says

Anything with tahini and pesto and I am there!

  50. Emily Clark says

Gosh….so much! I’ve got my eye on some Nike trainers. So them, and I’d probably overhaul my gym kit. Then some nice kitchen basics, like a nice set of cutlery and some pans. I’d be tempted to spend it on silly things though, so I’d have to be strict with myself!

  51. says

A sprouted lentil trio!? I hope I can find this at my local grocery store! I ADORE lentils!
And honestly, if I won the $700 Amazon prize some of it would go towards buying lentils: I buy so much food on Amazon.com!

  52. Michelle S says

That looks sooo delish! Now if only someone would make it for me tonight so it would be ready when I get home from 2 hours at the gym tomorrow! I would settle for someone delivering the ingredients to me. 🙂

As for shopping with that kind of Amazon $$$??? Wow, I don’t know. I would buy some pet supplies and two outdoor shelters for two sweet boys (kitties) that were abandoned in my neighborhood. After that, I’m not sure. I would probably look for really great sales on things I need like new gym clothes, spinning shoes, etc. First, I would probably walk around with a glazed look on my face – trying to believe it! Fingers crossed!

  53. carol johnson says

I would a gro light for herbs , not sure if it’s just me, but it’s not taking any of the instagram entries…….Just says Aw shucks, etc.

  54. Julie-Lynne McCann says

I would treat my husband with a new sewing machine that he has been wanting for a few years now. We haven’t been able to afford anything for Christmas for each other for years now as he is no longer able to work due to his illness & he is also a two time cancer survival.

  55. Katie Walker says

With such an amazing prize I could do so much. I would give some to my partner to buy e books. Get some good vegetarian cook books for myself and extras on top 🙂

  56. carol johnson says

I tried/thought I put in a comment the other days, when the forms I think were messed up……but can’t find it. If I have doubled, and you remove it. Not trying to get extra entry.
I would buy a grow light to have some plants indoors.

  57. Christina Jones says

This salad looks/sounds delish! I love salad! I could eat a salad daily. I had one for dinner last night at Jason’s Deli. Whenever I try preparing a salad at home, it never tastes that great, and I know it’s because I never have all of the great toppings that you get a salad bars, LOL.

If I won the $700 Amazon gift card, I’d buy my mother her 1st laptop because she could really use one and a new smartphone too.

  58. adriana says

One thing I would buy for sure is a stand mixer, I also want to get things to organize the kitchen like shelves and canisters.

  59. Anne Marie Carter says

One of the items that I would purchase on Amazon if I won this would be a heated jacket for my son. He works outdoors in the early mornings and he could really use this.

  60. Kristen Osborne says

I’ve always wanted to randomly search for a strangers wish list and buy something for them as an act of kindness. I know I would love if someone did that for me. Then I would save the rest for stuff we needed for our baby girl.

I hate to admit that I do not like Avocado. If there is guacamole in a Mexican salad I will eat it but other than that I don’t choose to eat it 🙁 Just don’t care for the flavor. Just wanted to say why I rated the recipe only 3 stars.

    • Vicky says

Love the idea of gifting something to a stranger. So sad you don’t like avocado – it;s my favorite! But just so you know there is no avocado in this recipe – the green color comes from cilantro so if you’re ok with that you’re good to go!

  61. Alicia Cukjati says

Looks like a beautiful salad…just bought the ingredients….expect to enjoy one tonight! The Amazon gift card isn’t a bad deal, either:-)

  62. Kathleen Fleitz says

As to what I’d do with a $700 Amazon gift card, I tutor children and could buy a lot of extra reading books and workbooks for them.

I live in venezuela i’m a CS student and I need a new computer /: My country has a lot of economic problems so our own currency is worth nothing. Thanks for the giveaway and the really nice recepie, i might try it.

  64. Amy Eastwick says

I would get myself a new tablet, then I would probably have a video game binge!!! Any extra wold go towards my Husband’s birthday present.

  65. Shaun Riggs says

Love the recipe and the Amazon Gift card would help me get the laptop I need so badly for school! Thanks awesome blog!

  66. says

I have 2 little ones, 8 and 2, so I would definitely put at least half aside for Christmas! The rest, I would love to pickup some new kitchen tools. I’ve had most of mine since my college years (eek! LOL). I love to cook, but it gets frustrating when things are sticking to pans because they’re not non-stick, or I’m using the wrong tool for the job because I don’t have the right one. I love to cook now, I could only imagine how much more FUN it would be with the right tools! Amazing giveaway, thank you so much for the chance!

  67. EMily says

$700 dollars for Amazon would be awesome! Unfortunately I’d mostly spend it on supplements instead of something fun.
