Thai Baked Salmon {Gluten-Free, Dairy-Free}

This dish has all my favorite Thai flavors – lemongrass, ginger, chili, kaffir lime leaves, galangal, limes, so I know this is bound to be a hit.

Chicken Enchilada Quinoa Casserole {Gluten-Free}

I’ve been craving enchilas since getting back from Europe recently and I’m back on a quinoa kick as well so this dish seems to cover both cravings perfectly !

Skinny Zucchini Casserole

I love fresh zucchini in the summertime but find myself always just sauteeing it with a bit of garlic as a side. Love the ideas for this shredded zucchini casserole to switch things up.

Chipotle Quinoa Sweet Potato Burgers with Crunchy Guacamole  {Vegan}

I have been obsessed with burgers lately – specifically veggie burgers and really feel the need to make just about every version out there so this is another one to add to the list. Will make these GF with gluten-free breadcrumbs.

Raspberry polenta cake  {Vegan}

Never would have imagined you could add polenta to make a dessert! Love the ideas and must try this simply yet sophisticated looking dessert. Would love to add a gluten-free flour into the mix to make the recipe GF as well.

Apricot-raspberry shortbread cake  {Gluten-Free, Vegan}

I’ve been wanting to get into gluten-free baking and this tart/cake with a mix of GF flours and a nutty hazelnut taste seems like the right compliment to a cocnut cream apricot based filling

Burmese Chickpea Tofu recipe  {Vegan, Gluten free}

I’ve been trying to back away from tofu after reading countless articles about how bad it potentially is for you, so this chickpea tofu sounds like the perfect alternative!

Carrot and Ginger Salad Dressing  {Gluten-Free, Vegan}

I’m not too creative with my salad dressing – usually just opting for a swirl of olive oil but I love the idea of a carrot and ginger infused dressing with an Asian flair.

Healthy Wholewheat Avocado & Pomegranate Brownies

Sersiously intrigued by these avocado and pomegranate brownies. Love that this is a healthier take on the usually not so good for you sugar loaded brownie dessert.

Homemade Pistachio Walnut Butter   {Gluten-Free, Vegan}

Love the idea of making your own nut butters and never would have thought to combine pistachio and walnut into one — can’t wait to try this. This sure beats the ideas of a store bought regular peanut butter
